Southern Barbecue

Is a site created to help others who are interested in Barbecue cooking, both for pleasure and competition. I am the Chief Cook with the "MonsterBasters" barbecue team based in Murphysboro, (Southern) Illinois. 

I'd like to extend a special "Thank you" to: Mike and "Big Red" from "The Other Side"  of Poplar Bluff Mo., and  Jay Ziegler from "Pork Improvement" of Murphysboro for getting me hooked on the finer points barbecue competitions, and allowing me to help out, watch, and  learn. 

Every September, our city proudly presents the Illinois Barbecue Championships (Memphis in May Sanctioned).   Our community also boasts several state and national champions, including the world famous "Apple City Barbecue Team", four time World Champions. 1997 World Ribs Champion "Late Nite Porkers". And Mike Mills' "Memphis Championship Barbecue"
